Are churros Spanish or Mexican or…..? The answer is - all of the above! The Spanish are most often credited for the creation of the churro. These sticks of sugary fried dough, dusted with cinnamon sugar and dipped in thick melted chocolate are a breakfast staple. In the U.S., we mostly associate churros with Mexican cuisine but its origins came via Spanish influence during the times of colonization. We’ve tried to be as authentic as possible with our oatmeal cookie version adding fragrant Vietnamese Royal Cinnamon and chocolate chips to the batter and finishing it off with a crunchy dusting of turbinado sugar.
